Homemade Chicken Soup

Let’s chase away those winter blues with some good ole homemade chicken soup. Chicken soup is the ultimate comfort food. It is warm, filling and nutritious. This recipe is great for single people as well as families. Anyone on a budget could benefit from this recipe….ENJOY!
Ingredients:

· 3-4 boneless, skinless chicken breasts, cut into bite-sized pieces (about 1 ½ pounds)
· 1 small onion (chopped)
· 1 cup chopped celery
· 2 medium-sized potatoes (diced)
· Water
· 1-12oz. frozen mixed vegetables (string beans, peas, carrots, and corn)
· 1 Box Lipton Noodle Soup with chicken broth
· 1-8oz. can Tomato Sauce
· Black Pepper (to taste)
· 1 Tablespoon Parsley Flakes

Directions:
Place chicken in a large soup pot, and fill with water. Bring to a boil on medium to high heat. Spoon out excess “stuff” from chicken. Then add mixed vegetables, celery, potatoes, and onions to soup pot with chicken. Cook on low to medium heat for about 15-20 minutes, stirring frequently. On low heat add Lipton Noodle Soup (both pouches), tomato sauce, and black pepper. You might need to add 1-2 cups of water due to the added noodle mixture. Simmer for an additional 5-10 minutes or until noodles are tender. Last but not least stir in parsley flakes for a great soup taste.

P.S. Feel free to substitute different parts of the chicken based on preference. If you decide to use a different part of the chicken, be mindful to cook the poultry longer before adding remaining ingredients. Bon Appétit!
